Easy Oatmeal Cookies

 



You Will Need: 

  • 1 1/2 cup rolled oats (pulsed in a chopper, pulse several times to ground the rolled oats into more of a powder form, but it doesn't have to be real fine)
  • 1/2 cup salted butter (softened to room temperature)
  • 1/4 cup sugar
  • 1 egg 
  • 1/2 tsp. vanilla extract
  • couple of sprinkles of Ceylon cinnamon or other cinnamon
  •  toppings for the top of cookies like a few chocolate chips, raisins, nuts ect. (optional)

Preheat oven to 375 degrees

In a medium bowl, cream butter and sugar, add egg and whisk well, add vanilla, add the oatmeal by folding it into wet mixture. Scoop by the tablespoon, onto a parchment paper prepared cookie sheet about 2 inches apart, flatten with a spoon, add optional toppings if desired. Bake for 12 minutes or until the edges get golden brown. Remove cookies from pan and cool on a wire rack. 

Makes 19 cookies

Simple Shortbread Cookies (1800's Recipe)

 


You Will Need:

  • 2 1/4 cups all-purpose flour (I used unbleached)
  • 1/3 cup sugar
  • 1 cup butter 

Preheat oven to 325 degrees
Combine flour and sugar, grate in butter with a grater and mix with the backside of a spoon, until mixture resembles fine crumbs and starts to cling. Use fingers at this point to further mix and form into a ball, knead dough until smooth. Divide dough in half, on ungreased surface (sheet pan), pat or roll dough into a 6" square. Cut into 9 squares, then cut in half to make 18 triangles. Prick with fork. Leave triangles in large square.  Bake for 25-30 minutes until bottom just turns brown. Cut into triangles again while still hot. Cool on cookie sheet for 5 minutes. Remove from cookie sheet, cool on wire rack.

Makes 36 triangles

A small batch of these can be made by cutting the ingredients in half. I actually cut the ingredients by half, and then half again to make a batch of 12 triangles.

These are great with tea, they taste similar to the store bought name brand shortbread cookies, but they taste better, and without the preservatives.

Chocolate Chip Cookies With Coconut

 


You Will Need: 

  • 2 1/2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp salt
  • 1 stick butter (softened)
  • 1 stick margarine (softened)
  • 3/4 cup sugar
  • 3/4 cup brown sugar (packed)
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 1 1/2 cup mini chocolate chips semi-sweet
  • 1/2 cup shredded coconut
Preheat oven to 375 degrees,  line cookie sheet with parchment paper,  combine flour, baking soda, and salt in a small bowl, set aside, in a large bowl combine butter, margarine, sugars, until smooth, add vanilla extract, and eggs, stir well until blended, add flour mixture, when blended well add mini chocolate chips and coconut. Drop by Tablespoons onto lined cookie sheets, cook 11 minutes or until golden brown. Cool on cookie racks. 

Makes about 36 cookies

White Chocolate Walnut Cookies


You Will Need:

  • 2 cups all purpose flour 
  • 1 teaspoon baking soda 
  • 1 egg
  • 1 stick butter
  • 1 stick of margarine
  • 3/4 cup brown sugar (firmly packed)
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 - 10 oz. package white chocolate chips 
  • 1/2 cup chopped walnuts
  • 1/2 cup coconut
Preheat oven to 375 degrees
Mix flour, baking soda and salt in a small bowl and set aside
In a large bowl, beat butter, margarine, and sugars together, add egg, stir together well
Stir in dry ingredients, mix until well blended, then stir in vanilla
Add white chocolate chips, nuts and coconut, stir
Drop by Tablespoons onto parchment paper lined baking sheets a few inches apart. 
Bake for 8-10 minutes until golden brown

White Chocolate Cookies


You Will Need:
  • 1 box devil's food cake mix
  • 1 stick butter (melted)
  • 1/4 cup water
  • 1 large egg
  • 2 tsp vanilla extract
  • 3/4 cups white chocolate chips
  • 3/4 cups semi-sweet chocolate chips

Heat oven 350 degrees place parchment paper on cookie sheet, beat cake mix, butter, water, egg and vanilla in a medium mixing bowl, mix medium speed 1 minute. Stir in choc. chips. Drop heaping tablespoons on cookie sheet 3 inches apart. Bake 12 -15 minutes until cookies are rounded and puffed up. They will fall when cooled. Cool on pan a couple of minutes then move them to a wire rack until completely cooled.

Walnut Coconut Chocolate Bars



You Will Need:

  • 1/4 cup butter or margarine melted
  • 1 1/4 cup graham cracker crumbs
  • 1 cup flaked sweetened coconut 
  • 1 cup semi-sweet chocolate chips
  • 1 (14 oz.) can sweetened condensed milk (regular or fat free, I used fat free and these turned out great)
  • 3/4 cup chopped walnuts
Preheat oven to 350 degrees. Coat a 13 x 9" casserole dish with oil and then dust it lightly with flour. Add melted butter and distribute the butter in the casserole dish evenly, next sprinkle graham cracker crumbs evenly and pat down, (do not mix), sprinkle flaked coconut over crumbs, then chocolate chips, drizzle sweetened condensed milk evenly. Top with nuts. Bake 24 minutes. Let them cool only for a few minutes, then cut them into squares while they are still a little bit warm. This will make cutting them easier. These are very rich, so I like to cut them into small bite size squares, but you can also cut them into bars if you'd like to.

Chocolate Chip Cookies


For this recipe you will need:
  • 2 1/4 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 sticks softened butter or margarine
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • 2 cups semi-sweet chocolate chips
  • 1/4 cup pecans
Preheat oven 375 degrees, Combine flour, baking soda, and salt, in a small bowl and set aside. Mix butter, sugars, and vanilla extract in large bowl until creamy. Add eggs and beat well. Gradually add in the flour mixture, mix well. Stir in chocolate chips and nuts. Drop by rounded teaspoons onto an ungreased cookie sheet. Bake 9-11 minutes or until golden brown.

Sand Tart Cookies

For this recipe you will need:
  • 2 1/4 cup self-rise flour (sifted)
  • 1/2 cup butter
  • 1/2 cup margarine
  • 1/4 cup granulated sugar
  • box of powdered sugar
  • 2 t. vanilla flavor
  • 1 cup chopped pecans
Preheat oven to 275 degrees. Cream butter, margarine and sugar together until smooth, slowly add flour until smooth, add pecans and vanilla flavoring. Shape into 1 inch balls. Bake on ungreased cookie sheet at 275 degrees for 1 hour. Yes, you read it right 1 hour. When done, dip the cookies in powdered sugar when they are still warm and again when the cookies cool. Note: I use a zipper bag for my powdered sugar to make it easier and faster to coat the cookies.

Oatmeal Cookies

You will need:
  • 1 cup butter (or 2 sticks) softened to room temperature
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 2 cups Self-rising flour
  • 2 1/2 cups old fashioned oats
Preheat oven to 375 degrees, Lightly grease baking sheets. In large bowl, cream butter, brown sugar and granulated sugar until mixed and creamy. Add the eggs, on at a time and mix well. Stir in vanilla. In another bowl mix flour and salt together. Now, add and beat the flour mixture into the creamed mixture. I mixed everything by hand using a large spoon. Stir in the oats. Drop by heaping Tablespoons 2 inches apart on the prepared cookie sheets. Bake 10-12 minutes, or until golden brown. Use a spatula and remove the cookies from pan and set on wire racks to cool.
