Spaghetti with Meat Sauce

 


For This Recipe You Will Need:

  • 1/2 lb. extra lean ground beef
  • medium yellow onion chopped
  • 1/4 green bell pepper chopped
  • 1 small can mushrooms (drained)
  • 2 tsp. minced garlic
  • 1 can Del Monte Brand Italian Stewed Tomatoes (chopped)
  • 1 can diced tomatoes (I used Great Value Brand)
  • 1 small can tomato paste (6oz.)
  • 2 cups water
  • 1 tsp. dried parsley
  • 1 Tablespoon brown sugar
  • 1 tsp. salt
  • 1 1/2 tsp. dried oregano
  • 1/4 tsp. dried thyme
  • thin spaghetti (cooked according to package instructions) 
  • powdered parmesan cheese (to sprinkle on when serving)

In a large pot place ground beef, onion, and bell pepper, cook on medium high heat, stirring until beef is browned, add minced garlic stir and cook for a minute, next add rest of the ingredients (besides the noodles and parmesan cheese). Bring to a boil and then cover and simmer on low for about 3 hours, stirring occasionally. Serve over cooked spaghetti noodles, with a sprinkle of powdered parmesan cheese. Serve with garlic bread and romaine salad. 

Serves 4 (or maybe more depending on serving sizes)

This sauce has a slight sweetness to it, and it has just the right amount of Italian flavor, without it being overpowering, it is delicious and so easy too.

You Will Need:

  • 1 lb. lean ground beef
  • 1/2 small yellow onion chopped up
  • 1 small can (8.5 oz).  LeSueur sweet peas drained and set aside (don't go cheap on the peas, buy this name brand)
  • 2 heaping tablespoons flour 
  • 2% or whole milk start with about roughly 2 cups and add more as needed for desired consistency 
  • salt and pepper to taste 
  • sprinkled garlic powder to taste
  • toasted white bread 
Brown ground beef with onion, garlic powder, salt and pepper in a skillet on medium-high heat. Once browned, drain excess grease, leaving a little grease, return meat to the skillet, stir in flour and mix well, then begin adding in the milk, turn temperature up to medium-high until it gets bubbly, stirring constantly. Add more milk as it thickens and keep stirring. Once it's reached desired consistency add drained peas and turn down heat to medium low, stirring occasionally until peas are heated. At this point you can add water or milk if it begins to get too thick. You want it to be the consistency of a thick white gravy, not soupy. Serve on opened face toasted white bread. Add more salt, pepper and garlic powder to taste.

Ground Beef and Macaroni Skillet Dinner


You Will Need:

  • 1 lb. ground beef or ground chuck
  • 1/2  medium yellow onion (chopped)
  • 2 small cans tomato sauce
  • 1 small can kernel corn (not drained)
  • 1 cup elbow macaroni
  • 1 Tablespoon chili powder
  • 2 tsp. garlic powder
  • 1 cup shredded cheddar cheese
  • 1/2 cup of beef broth (or water)
  • sprinkle of salt and pepper

In a large skillet over medium heat, brown ground beef and onion, drain, return meat to skillet, then add corn, macaroni, tomato sauce, and broth (or water), cook covered for 30 minutes stirring occasionally. During the last 10 minutes or so stir in chili powder, garlic powder and sprinkle of salt and pepper. After the macaroni is tender, top with cheese and heat covered for about 5 minutes. 

Makes about 6 servings

This recipe came from one of the old cookbooks that my grandma gave me (mama's mother). It's easy and quick to make, and full of great flavor. 

Serve with salad or green beans and a slice of buttered white bread

Mushroom Beef Patties



You Will Need:

  • 1 pound ground beef
  • can  cream of mushroom soup
  • 1/2 cup Italian seasoned bread crumbs
  • 1/4 cup chopped yellow onion
  • 1 egg beaten
  • 1 Tablespoon oil
  • salt and pepper
  • small can mushrooms drained
  • 1 Tablespoon worcestershire sauce
  • 1/2 cup water 

In a large bowl, mix about a Tablespoon of soup with ground beef, bread crumbs, onion, egg and sprinkle with salt and pepper. Shape into patties, cook in a large skillet on medium-high heat until well browned on both sides. Remove from skillet. Reduce heat to medium, add oil and mushrooms and cook a couple of minutes, stir in remaining soup, worcestershire sauce and water and bring to a boil, return patties to the skillet. Reduce heat to low and cover, cook about 30 minutes or until patties are no longer pink. Add more water as needed to thin the sauce or for desired consistency.

Serve with mashed potatoes and a side of vegetables (green beans)

Taco Salad


You Will Need:

  • 1 lb. ground beef cooked and drained 
  • 3/4 cup picante sauce 
  • bag shredded lettuce 
  • 3/4 cup shredded cheddar cheese
  • 1 can black beans (partially drain, and add water to cover beans in a small pot, heat until boiling, reduce heat and keep warm) 
  • 1 can whole corn (bring to a boil, reduce heat and keep warm) 
  • 1/4 cup chopped red onion
  • 1 small tomato
  • guacamole (optional)

Season cooked meat with 3/4 cup picante sauce, bring to a boil and keep on low until ready to put the salad together. Layer lettuce, cheese, warm beans, warm corn, onion, tomato and optional guacamole, on individual plates, top with beef, drizzle with dressing and optional guacamole. 


For the Dressing You Will Need: 
  • 1/2 cup picante sauce
  • 4 Tablespoons Sour Cream
  • 2 Tablespoons Lime Juice
Makes 4 Servings

Beef and Mushroom Potato Bowl

You Will Need:


  • 1 lb. ground beef 
  • 1 small can mushrooms (drained)
  • 1/2 yellow onion chopped
  • 1/2 tsp. minced garlic
  • sprinkle garlic powder, salt and black pepper
  • 1 pkg. brown gravy mix
  • 1 1/2 cups water
  • 1 tsp. worcestershire sauce
  • 1 Tabs. dried parsley 
  • cooked mashed potatoes 
  • cooked broccoli florets (or other vegetables you like)
In a skillet, brown ground beef with onion, minced garlic, garlic powder, salt and pepper, mix gravy pack with 1 1/2 cups cold water, pour over meat, add drained mushrooms, parsley, and worcestershire. sauce, stir. Bring to a boil then reduce to simmer, for about 20 minutes or so, or until ready to serve. You can add a little more warm water if needed, if it thickens too much, before ready to serve. Top meat mixture over mashed potatoes and broccoli or vegetables of choice. Serve with crescent rolls.

Chopped Steak with Onion & Mushroom Gravy


You will need:

  • ground sirloin meat (enough for your size family) 
  • 1/2 onion chopped
  • 1 small can mushrooms or mushrooms with stems (drained)
  • 2 cups beef broth
  • 1/4 cup water
  • 1 heaping Tablespoon cornstarch
  • 2 tsp. canola oil
  • salt, black pepper, and garlic powder


Directions: 

In a nonstick skillet, add oil, onion and mushrooms, cook on medium heat for about 5 minutes or so until onion is tender and transparent looking. Remove from skillet, place in small bowl and set aside. 

Make patties from the ground sirloin meat, sprinkle with salt, pepper and garlic powder on both sides. Add to skillet and cook on medium heat about 15 minutes (flip them every 4 minutes or so)  until they are no longer pink inside and liquid runs clear. When they are done, remove them from the skillet place on plate and set aside. 

Add cornstarch to 1/4 cup of cold water, stir well and set aside. (this is called cornstarch water)

On medium heat, to the skillet add beef broth, stir to remove beef bits from bottom of pan, stir in the cornstarch water, continue stirring, turn up the heat to medium-high heat, bring to a boil, keep stirring, when thickened (after about 5 minutes or so), add onions and mushrooms back to the skillet, salt and pepper to taste. Reduce heat to low until ready to serve. Serve gravy over patties, or you can add the patties back to the skillet until ready to eat. 

This is great with homemade mashed potatoes!

Note: This is a thin gravy, for a thicker consistency, you can add a little more cornstarch mixed with little bit of water (a little bit at the time) and boil, and repeat, until desired thickness.

Homemade Beefy Mac and Cheese Skillet



You will need:

  • 1 Pound Ground Beef
  • About 1/4 Cup Green Onion (washed and chopped include the bottom white part)
  • Garlic Powder, Salt and Pepper to Taste
  • 1 Reg. Sized Can Tomato Soup
  • 1/4 Cup Water
  • 1 Tbsp. Worcestershire Sauce
  • 1/2 to 1 Cup Grated Colby Jack Cheese
  • 1 Cup Uncooked Elbow Macaroni Pasta (that's been cooked according to package directions and drained)


Brown meat on medium high in a large skillet with green onion, sprinkled garlic powder, salt and pepper. Once meat is brown, drain and return to skillet. Stir in soup, water worcestershire sauce, and cooked pasta. Cover and bring to a boil and then reduce heat and simmer about 20-30 minutes, stirring frequently. Just before serving top with grated cheese and cover until melted stir and serve.

Serve with a salad or green beans and cheddar biscuits.
Serves about 4-6 people

Cocktail Meatballs


For this recipe you will need:
  • Ground Beef (1 to 2 pounds depending on how many people you will be serving)
  • 12 oz. bottle of Chilli Sauce (found in the condiment section of the grocery store, near the ketchup ect)
  • 2 cups of Grape Jelly
  • Salt, Pepper, Garlic Powder, Dried Onions
 Put the ground beef in a large bowl, generously sprinkle with salt, pepper, garlic powder, and dried onion. Mix together and then form the ground beef into 1 inch round balls. Place them in a skillet, cook on medium heat until they are well browned and no longer pink inside. Remove from skillet and drain on a plate. Now, in the same skillet, add the bottle of chilli sauce and grape jelly. Stir these together until  they are melted and are mixed well.  Put the meatballs back into the skillet and gently stir them in the sauce.  Simmer covered on low for a couple of hours, stirring occasionally....the longer they cook the better flavor they will have. Serve these warm with toothpicks nearby.

Mexican Enchilada In a Skillet

You will need:

  • 1 pound ground beef
  • 1/2 cup Water
  • 1/2 cup of your favorite Salsa (I've used both Chi Chi's brand and Pace brand before)
  • 1 can tomatoe soup
  • small chopped onion
  • 4-6 oz. grated cheddar cheese for the topping
  • 10 Mission Brand soft yellow corn tortillas (6" size) cut into 1-2 inch pieces
  • Salt, pepper, garlic powder sprinkled
  • can of Old El Paso Enchilada Sauce
Brown the ground beef in a skillet with chopped onion, sprinkle with salt, pepper and garlic powder, drain fat and return to skillet. Add the water, salsa, tomatoe soup and cut up corn tortillas bring to a boil and stir, then cover and reduce heat to low for about 5-8 minutes stirring occasionally. Top with grated cheese and cover until melted. Put on serving plates and drizzle the skillet enchilada with heated enchilada sauce on each individual plate. Serve with chips and salsa, chips and guacamole dip (click HERE for my recipe for guacamole dip), refried beans or rice.

This recipe is about as easy as it gets, when you need something quick! This was a Campbell's Kitchen Recipe I found in a magazine....I changed a few things to suit my taste...like adding the enchilada sauce, onion, salt, pepper and garlic salt.

Easy Tator Tot Casserole


You will need:

  • 1 lb. ground beef
  • 1/2 yellow onion chopped
  • garlic powder
  • salt and pepper
  • 1 can Campbell's Cream of Mushroom Soup (Store brand does change the taste of this recipe, so I recommend Campbell's)
  • Ore-ida Tator Tots
  • 1/2 of the soup can filled with water and 1/2 can of milk 
  • 8 oz. shredded cheddar cheese
  • 8 oz. shredded mozarella cheese.

Brown ground beef in a skillet with the chopped onion, sprinkle a generous amount of garlic powder, salt and pepper. After it is brown, drain and return to the pan.




Add the can of cream of mushroom soup to the meat, then add the milk and water. Bring to a boil.....remove from heat.....

Pour it in a greased oblong casserole dish.........top with the grated cheeses......


Then top with the tator tots, sprinkle the top with salt.....
Cook at 350 degrees for about 45 minutes until golden brown.

Let it stand for about 5-10 minutes before serving. Yummy....just look at that gooey cheese!

Serve it with a side salad, and your favorite bread .....I like Texas toast. Enjoy!

P.S. My boys like the tator tot casserole with ketchup, but I like it just like you see it pictured here! Hold the ketchup on mine, Please...

Restaurant Style Tacos


You will need:

  • 1 lb ground chuck
  • 1/2 chopped onion
  • small peeled potatoe quartered
  • chopped garlic clove
  • 2 Tablespoons chopped fresh cilantra
  • 2 tsp. white vinegar
  • 1 pkg. McCormick Taco Seasoning mix (see what package looks like below)
  • enough water to cover the meat in a saucepan
  • Salt and Pepper to taste

Put the ingredients in a medium saucepan and cover with water, bring to a boil.....then reduce heat and cover....cook for about 30 minutes or longer for more flavor.....

Other ingredients you will need:

  • Taco shells
  • Monterrey jack cheese grated
  • Shredded lettuce
  • Diced tomatoes
  • Sour cream
  • Homemade Salsa


This is what the meat ingredients will look like as it cooks....
(McCormick's Taco Seasoning Mix)

When the meat is done, spoon it into a bowl and salt and pepper it to taste, then stuff the tacos shells that have been heated according to package instructions.






Top with your favorite toppings..... I like to use Monterrey Jack Cheese, Shredded Lettuce, Diced Tomatoes, Sour Cream....and sometimes I add some of my homemade salsa too. Serve with Refried Beans topped with cheese, serve tortilla chips and salsa as an appetizer or to eat with the taco meal.
These tacos are so delicious.....the meat is very moist....I had always browned my meat in a skillet before, but I decided to try boiling it instead, and what a delicious difference it makes.

Poor Man Dinner~ Easy Recipe with Ground Beef~



This Recipe has been around for as long as I can remember, It's a winner in my book, ( I first stumbled upon it over 20 years ago)......I especially like it because it's tasty, easy, economical, and the clean up is a cinch. You cook it all in aluminum foil in a pan in the oven. Now for the recipe....You will need
  • Ground Beef or Ground Chuck (enough for your size family, I used 1 pound)
  • Chopped potatoes
  • Chopped carrots
  • Chopped onion
  • Salt, I like to use McCormick's Seasoned Salt, or Mrs. Dash Garlic and Herb.
  • Pepper
  • A Side dish of your favorite Green Veggie
You first line a shallow pan with foil (get enough foil so that it can be wrapped over the top and closed on the edges), then make patties from the ground beef, season with plenty of pepper, salt (you can use Mrs. Dash or seasoned salt too) Add chopped onion to the top.....(Tip: you can use this cooking method for pork chops, chicken pieces also, and you can add your favorite veggies in to the mix....like bell peppers, or green beans...what ever you like to make it your own).

add chopped carrots and potatoes and more onions to the top....season generously with salt and pepper....



Now, over lap the foil over the top and then seal the edges rolling them closed. Cook in the oven at 350 degrees for 1 hour, then open up the foil carefully (it will be very hot) fold it back and cook uncovered for about 10 to 15 minutes longer.


It will look like this when it is done.....

I like to serve with a green veggie for a side dish ....I chose broccoli and cauliflower with cheese. The clean up is so easy with this meal....just throw the aluminum foil in the trash and you are practically done.

Homemade Chilli~ Easy Recipe~ Cold Weather Comfort Food


You will need: 


  • a pound of ground chuck or hamburger meat,

  •  half of a yellow onion chopped, 
  • garlic glove chopped, 
  • can of Del Monte Italian Stewed Tomatoes chopped,
  • can of light red kidney beans drained, 
  • 1 Tablespoon white vinegar, s
  • small can of tomatoe sauce, 
  • 2 Tablespoons of McCormick Chilli Powder, 
  • For serving you'll need Bisquick garlic cheese biscuits from the package, or Jiffy sweet cornbread or your favorite crackers.....whichever you prefer. I like the Garlic Cheese Biscuits the best...

Brown the hamburger meat with the chopped onion and garlic on med-high heat.......

When it's browned, drain it in a colander.....return it to the pot,


Then add all of the other ingredients to the pot........bring to a boil and then simmer it for about 30 min. to an hour......cook your garlic cheese bisquick biscuits or corn bread while the chilli is simmering...

then when it is done, it will look something like this.
